KIND Snacks investor says Kraft Heinz and PepsiCo need to 'stay authentic' to acquired brands
BakeryAndSnacks.com - Former KIND Snacks' investment firm, VMG Partners, was asked during the recent Food Vision USA in Chicago if big food companies like Kraft Heinz and PepsiCo should acquire emerging products or create their own brands to scale up innovation. Its response: 'they should do both.' "Big CPG (consumers packaged goods) companies have endless resources to create phenomenal products, a beautiful package and brand, but one of the things we've seen with all the data is that it is really difficult to trade off authenticity," Wu pointed out. Often times when a big company steps in, its strategy is "contrary to how an emerging brand thrives, he said. "They will integrate and try to extract synergies, but you see the brand slowly die." Read.

Cal State-Long Beach Researchers Discover Taste is Not Dependent on the Tongue
Daily 49er - What food or drink would you miss the most if you didn't have a tongue? It turns out, there's no need to worry. According to a study conducted by Cal State Long Beach researchers, the human body is able to recognize complex flavors without one. Isolated Congenital Aglossia is a rare condition where a person is born without a tongue, which affects their ability to taste. The research involved a wine tasting survey to assess how individuals lacking tongues perceive flavor. "If we could figure out how people without a tongue could taste without ever using the tongue, we could help those who were born with a tongue but for some reason lost it," said Long Wang, assistant professor of nutrition at the university. Why The World's Largest Pork Producer Is Breaking New Sustainability Barriers
Forbes - As head of the Smithfield Foods' sustainability program, Stewart Leeth focuses on animal welfare, employee relations, environmental stewardship, food safety and quality, and community development. EDF has been collaborating with Smithfield for several years now to help farmers optimize fertilizer applications to grow grain for animal feed -- and I'm inspired to see the progress that has been made in this arena. But I think this past year was likely the busiest ever for Stewart and his team at Smithfield after they made an industry-leading commitment to reduce greenhouse gas emissions. Read.

Steve Ells (left) is on the way out as CEO of Chipotle Mexican Grill Inc., announced Wednesday, Nov. 29, but he's remaining as executive director at the company, meaning he'll be the boss of the new CEO. Ells, in fact, is on the committee to find his replacement. That's leading analysts to doubt whether there will really be a change. "You wonder how much is for public perception and how much is real change," restaurant industry consultant Aaron Allen, chief strategist of Aaron Allen & Associates, told TheStreet on Wednesday.

"Groceries account for 56% of Wal-Mart's total business. The company tends to dominate food prices in the retail industry due to its sheer size and logistical capabilities, which gives it a competitive edge. The combined Amazon-Whole Foods entity will need to come up with more ways to convince customers to opt for its stores and products over Wal-Mart's, as its scope for further price cuts is likely relatively limited."

OSU study grows new respect for barley
Bend Bulletin - Barley may be the new hops, if research by Oregon State University yields the potential for brewers that a recent study suggests. A research team found that barley itself, and where it's grown, can impart unique flavors to beer, from floral and fruity to toffee and toasted. Typically, malted barley plays a supporting role in brewing. Unlike hops, varieties of which give brewers a wide palate to choose from, only a narrow selection of barley varieties are used in brewing. That could change during brewing trials using malts of the OSU varieties. Read.

My picks for the top food trends of 2018
Column posted by Daniel Neman at STLtoday.com - About a year ago or so, I wrote an admittedly snarky little column about a survey of food experts making predictions about upcoming trends. The survey was presented by the Food Channel, and this year they got even with me. They invited me to take part in the survey. Naturally, I accepted. I am perhaps a little too fascinated by trends in food, so this was like whipped cream to me..... After considerable thought, here are the top 10 upcoming food trends I picked, in order (the trends' names were part of the survey)... Read.

Argo Tea brings cold-brewing to tea as next step in health & wellness and premiumization trends
FoodNavigator-USA.com - Cold brewing -- along with its health benefits, unique flavor profile and its market energizing success -- is no longer restricted to coffee thanks to Argo Tea's launch earlier this fall of three ready-to-drink Single Estate Cold Brew Teas. "Cold brew coffee maybe has a two or three-year head start on the cold brew tea segment, which is certainly nascent with only a couple of brand offerings available currently and nothing else in the premium space besides our new line," Mike Ginal, VP of national sales for Argo Tea, told FoodNavigator-USA. Finding nothing, they decided to create their own treat Jackie could indulge in, which led to the founding of The Lovely Candy Company..... It took less than a year to get up and running and they haven't shown signs of slowing down yet. Read.

Chipotle, looking for a turnaround, shops for new CEO
Orlando Sentinel - Chipotle is looking for a new CEO to help it recover from a series of food safety scares and slumping sales and return to its heyday, when consumers flocked to its casual Mexican dining restaurants for quality ingredients at a reasonable price. Jimmy John's Ranking at Marquette U
Marquette Wire - Campus is crawling with sandwich options. Between Cousins Subs, Jimmy John's, Subway and the dinning halls, students can always find a sub. Jimmy John's is a campus favorite, but whether or not they deserve that reputation is another story..... Before getting into taste, let's talk sandwich preparation speed. Jimmy John's slogan is "freaky fast," so one of the goals of this experiment was to test that claim. I started my phone timer when I said what sandwich I wanted, and stopped the timer when I grabbed the sandwich off the counter. Despite some sluggish sandwiches, all in all, their efficiency was impressive... Read.

Other conditions included choking, blockage of the digestive tract, vomiting, diarrhea, and bleeding from the rectum. Read.
